Olive brine • 0.25 oz

Manzanilla sherry • 0.25 oz

Olive

STEPS

1. Combine SONKLIN, dry vermouth, olive brine, and manzanilla sherry in a highball glass with ice

2. Top with tonic water and stir gently

3. Garnish with an olive

NOTES:

SONKLIN is a softer base than gin here, the briny, savory structure carries the drink more than the spirit does.

HISTORY

Adapted from Fanny Chu's Dirty Martini Highball, originally published on Punch. SONKLIN's clean, lightly sweet rice-spirit profile stands in for gin, landing closer to a vodka Dirty Martini in character while keeping the olive brine and manzanilla sherry salinity of the original.
